
50ml London Dry Gin
25ml Lemon Juice
15ml Sugar Syrup (2:1)
3-4 Drops of Wonderfoam (replaces egg)
Top with soda water
combine all ingredients into the shaker except for soda water. Shake it for 5ish seconds without ice, then add ice and shake it hard for 10-15 seconds.
Grab a classic Hawthorne strainer and then a fine mesh strainer and strain into a tall Collin’s glass.
Pour everything in and it should reach 2/3 of the way up the glass. Grab a bar spoon (or a regular spoon) and gently stir as you pour the soda water in until you start seeing it float above the glass.
